I like to add spinach to my gluten free pancakes.  Why? Because it tastes good and helps me load up on my daily dose of spinach.  These pancakes are easy to make.  Make a batch beforehand and place them in the freezer.  Pop them frozen into the toaster for a fast nutritious pre-round meal.

Cardiogolf Spinach Pancakes
Ingredients:
1/2 cup Pamela’s Protein Pancake Mix
1 egg, large or egg substitute
1/2 cup mike or water
1 tablespoon coconut oil
2 cups baby spinach, washed
